Extremely Healthy Cranberry Sauce
This really is a very easy but extremely fresh and tasty cranberry sauce. A perfect gift as well as delicious on your own table.
A homemade version of cranberry sauce looks more vibrant and a beautiful deep crimson colour, as well as being much healthier with no additives and natural sugar. The touch of orange gives it a beautiful tang as well as a helping of Vitamin C. Fresh cranberries (or even frozen ones) are little powerhouses of antioxidants to help ward off everyday germs and diseases.
Serves: 8 – 10 (1 medium sized jar)
Preparation Time: 2 minutes
Cook Time: 5-10 minutes
Setting: 2 hours in the refrigerator
Ingredients:
90ml maple syrup or raw honey
100ml fresh orange juice, plus 1tsp orange zest
275g fresh or frozen cranberries (if frozen, quantity must be net of glaze)
Method:
Place orange juice and maple syrup or honey in a pan and bring to the boil.
Stir in the cranberries and simmer until tender, but not mushy. This takes about 5 minutes from frozen and 8-10 minutes from fresh.
Leave to cool, then test flavour. If you prefer it sweeter, add more orange juice or maple syrup/honey.
The sauce will thicken as it cools. Can be kept in the fridge for up to a week, or jar immediately and seal.
