Chocolate and avocado mousse

Chocolate and Avocado Mousse

This is a delicious dessert, smooth and luscious to taste and not overly sweet. Avocado has plenty of heart healthy Omega 3 fatty acids, whilst consumption of cocoa has been shown to reduce levels of bad cholesterol, potentially lowering the risk of cardiovascular disease. Fresh berries are also full of flavonoids and antioxidants as well as having a beautiful taste. Using dark chocolate, it is a healthier way to indulge! A delicious and healthy dessert as an alternative to Christmas Pud!

Serves:                      2

Preparation Time:  15-20 minutes

Cook Time:              No cook, just chill!

1 large ripe avocado

2tbsp rice milk

2tbsp raw honey (you can add more for extra sweetness)

2 drops vanilla extract

2tbsp dark cocoa powder

A few fresh raspberries or any soft berry to compliment the mousse

Peel and stone the avocado, and put the flesh into a blender, with the honey, cocoa powder, rice milk and vanilla.

Blend together until smooth and fully combined. If you would like your mousse sweeter, add another small touch of honey and blend for a few seconds more.

Scrape the mousse out of the blender into small dishes or pretty china tea cups. Chill for at least 30 minutes, then top with your chosen berries.
